Welcome to the forum, Bully #9.
Congrats on getting back into the hobby. What brand of track did you and your wife buy?
There are several track planning experts here. They will chime in.
Warm regards,
Ken

Welcome.
With regards to a layout, there are plenty of suggestions in the reference part of this wensite. But you could just start putting together some track pieces to make up something, and then run some cars round to get a feel for what works for you, and what doesn't. And then modify it according to what you find enjoyable.

Welcome aboard, and welcome back to the hobby.
How wide are the L-shaped pieces? You said it's 8ft x 8ft on the back edges, but how wide, or deep is it on the sides of the L? It's difficult to make specific suggestions without all the measurements.
There are probably some basic bits of advice that are worth passing on...
Firstly, include borders and barriers around the track to avoid your cars getting smashed up.
Secondly, scenic tracks are great, but its worth driving your layout for a while before you get too heavily into the scenics, to make sure you're happy with it.
Finally, if you've bought Scalextric sets, that probably means you'll have mainly R2 corners, possibly with an R1 hairpin or two. It's definitely worth thinking about adding some R3 & R4 corners for variety.
Also, it may be worth looking at our
